Monsoon Malabar, from Heartland Roasters in Llandudno, is a popular coffee at Seibiant Coffee Shop. Originating from Chikmagalur, in Karnataka in South India, grown at an altitude from 700-1200m, from various producers.
The Monsoon process involves leaving the beans out in the monsoon winds of south west India, for 3-4 months, causing the beans to swell and lose the original acidity, resulting in a flavour profile with practically neutral pH balance. The coffee is unique to the Malabar coast area, and has protected status.
The Monsoon process results in a medium body, low acidity, and an intense flavour and aroma of chocolate and spice.
