Pai Mu Tan is a full flavour white tea, made with two leaves and a leaf shoot. The leaves are generally sun-dried for 1-3 days and then piled, for the oxidation process, for 1-3 hours. They are then packed carefully in order to avoid breaking the leaves. Although the processing steps are simpler than those for other teas, the long process and the variable factors during which are key cost factors. For example, a sudden rainstorm during the lengthy withering can be destructive.
