This is a rare black tea from Japan – quite a new development from Kyoto Obubu Tea Farms, which is where I recently spent two weeks on a course, learning all about Japanese Tea. We actually processed some of this tea ourselves, but this is obviously made by the professionals – saying that, the professionals are simply the farmers that grow the tea – a small operation of 3 hectares over 20 small sites.
The tea is a cracking red tea, described as having a light earthy flavour with dark chocolate undertones. I definitely get chocolate, but I also get dark florals, with something quite a lot like a dark roasted oolong. It’s pan fried at the final stage.
